oooo...getting into the bad habit of blogging during office hours, not only because it disruptive to work etc but also because I didn't have a reportire of pictures to upload!
hee hee...bear with me for a while..this post does not really need pics though :)
Received an offer from the previous interview I went to... .but the offered salary was way below my expectations! Told HR I am keen in the job but I have to be practical too, that pay plays an important factor in my consideration and ultimately the decision as to whether I will take up the offer or not.
She says will get back to me...well I still waiting..
The job shows lots of prospects and promises. It really interesting and wil propably help to further my career or kickstart a career in psychology in healthcare. I still have to get my Master and hopefully PHD so that I can be offically known as a Pscyhologist! hee hee..in a way it is my interest and also evenutally I would like to convert my psychologist job into a part time career (while still making loads of money!!) and concentrate on other things.
Update: My little Niu Niu has blood in her urine! Really make me scared for a while until I get into contact with my dog's lastest vet and she assured me that urinary tract infection (that what leads to the blood!) and stones usually go hand in hand. She mentioned to me to monitor niu niu's condition for a while and to notify her immediately shall there be straining and copious amount of blood in the urine. Niu Niu scheduled for a ultrascan this week and if need to, a suregery to remove the stones! Vet mentioned to me that it might set me back by almost $1,500.00, better start tightening the money belt!! :)

Okie..just a simple post...cos I think I need to record down my stupidity so I never forget about it!
haha.. ..had been well sorta diligently sourcing for a new job, thanks to all my friends who alert me to new openings and offering to send my resumes to friend's friend's friend etc, I really thankful and grateful for it! :)
But hor just realized a silly silly mistake, I actually forget my own mobile NO and input a wrong number! Darned it..no wonder no ones call..haha..only realized it as Sister Jane in her haste to call me called my house hold's no and got the correct mobile no from my family and alert me to the mistake!
OMG...was tt a colossal mistake or wat...haha. ...that teach me not to take things lightly and to make sure i double check, triple check, quadraple check etc...
Anyway, thanks to dear sister Jane, I went for the meet up with the doctors . It sounds really really challenging and interesting. I forsee lots of new things to learn and understand, plus the workload propably not gonna be light so I better make sure I fully prepared for it. The doctors were telling me that I had to make sure I mentally prepared to commit at least for 3 years. Well commitment will not be a problem if I am happy with the job but what if I AM NOT!!! not reasonable to stay on right..i guess that what a lot of recruiters never think about when they talk about commitment, most people are willing to stay on (only a minority are chronic Grasshoppers on the jobs!) if there are no extenuating circumstances such as mismatch between job and candidate, mismatch between boss and subordinate or mismatch between staff and work environment!
We cannot predict the future and i do think it is unreasonable to expect staffs to promise what they cannot gurantee. But well that how work system in Singapore works and I guess we all just have to adapt to it :)
Anway a side track: this coming saturday is 07.07.07, lotsa people are getting married! haha there just some kind of chemistry between chinese and numbers...i guess next year 08.08.08 will be a popular date too, like wise 09.09.09, 10.10.10, 11.11.11 and 12.12.12 .. . ..haha

Why did I dreg up the photos of bodystep course. Well not only because I just realized I did not post any photoz about it, but also because I make a decision regarding Step just a few days ago.
About a week ago, the head instructor of Body Step, Julian sent out a mass email to the trainees informing us about an audition that we are required to go through shall we want to attend intensive and eventually become an instructor. In my own happy world, I decide not to go as the thought of being an instructor has never been on my rader. Until I come into contact with the rest of the trainees who are very keen about it! After much to and fro conversation, I decide to go for the audition shall Agnes goes for it too..hee hee...that because among all of us..we two are apparently the least interested in being instructors. Well eventually did not go though cos Miss Agnes had a change of mind! ha ha...needless to say..it was a load off my mind...I don't mind going for intensive but well...audition! that like making commitment to start a future as an instructor which I am not mentally prepared to be.
Well eventually might consider being an instructor but only if I am mentally prepared and know fully well what i getting myself into. And that defintely in the future since my first priority now is to concentrate fully on getting a new permanent job.

My apologies..for not updating my blog...time passes in a whirl and I just do not realized that...
First all.... I just recently completed a grueling two days Body Step course conducted by Les Mill trainer. Now then I realized being an instructor is not as breezy as it seem, to remember your cheorography, cueing and being entertaining at the same time is not EASY! It takes practice and being comfortable with your moves, your cues and yourself before you are able to make others at ease with you. I would say being yourself is one of the important factor, how many of us are comfortable performing in front of others and allow ourself to be scrutinzed and criticizied. Helping my own voice cueing others and teaching the moves to others is also very alien to me who do not have experience in public speaking. Being so dependent on others on telling me what is the next step makes me realise that being the one who allows others to be dependent on is no mean feat; it carries a responsibility and heighten an awarenes of oneself.
Well immediately after the course, I was sick (might have something to do with the foolhardy act of drinking the ma la broth out of curiosity :) ) and was out of work for 4 day! Till now I am still nursing a flu and cough, hopefully it gets better soon. Went gyming on Friday, but was helpless like a babe, carried very light weight and get breathless easily during Step class. But neverthessless, I enjoyed myself and hopes to get back the feeling of being strong and invicible in class! ha ha.. ..
Met up with a friend who has went back to Australia to study and work. His parents were from Singapore but migrated to aussie and gave birth to my friend over there. He came back for a short stint during his teenaged years but eventually still find Aussie more to his liking. So since he came back for a visit, we have a opportunity to meet up and reminisince...oh mine..oh mine..how all of us had grown up. What a weird feeling..to feel the same and yet not the same..to still remember the quirks but found something new to marvel at too :) I guess that humans..forever evolving.
Went to Shandel's house too over the weekend. Ha ha...the gal who rarely set foot in a kitchen and does not even know where her kitchen knives are located want to make a cake for her BF's birthday! We attempt the impossible, making a layer cake from scratch, with mousse and ganache! ha ha.. ..who says novice cannot dreams BIG! hee hee...that gal was diligently scrawling in her notebook her observations and tips while I was demonstrating. Well she seems to understand quite well; let wish her success for that day!
My little precious dog went for a dreaded vet visit over the weekend too. She was scratching herself excessively and bleeding from her scratches! Turns out she has yeast infection and the itch was unbearable to the point that she scratches herself obessively. Went for an x-ray too as she was passing out stones in her urine. X-ray shows that she has 5 stones in her bladder! Now we are sending the sample to SGH for analysis and praying hard that it is nothing serious. And all these cost an whopping $315..haha...but her life much more important and money can always be earned..*shrugs*.
Till then pics..haha..but i kinda lazy to upload
PS: also attempt kueh lapis..prune kueh lapis...manage only 10 layers cos i was too lazy to really make it thinnnnnnnnn....hee

Okie a lot of back dating.. ..haha photoz to update...but have not been faithfully doing it..
so will post whichever events I can remember .. .hee hee
Okie first up.. .... celebrated Monica Birthday!!! This amazing lady has a really good figure..hee hee considering her age.. ..I just wished that when I reach her age..I will be able to be that good too.. ..Gary bought her a Canele Le Royale Birthday Cake!!! Full of chocolately goodness..or should I say..sinfulness!!! hahaha...It really rich and good. ... we celebrated for her after the Saturday Aquaz claz....and well resulting photoz of course are not of tt much eye candy..since we are wet and hair are plastered all over our face..haha
Then yesterdae was Cat's Bdae!!! we had a mini celebration after Attackz oso..this time is also Canele..but it Macha (green tea) cake instead... hmm...it might be a bit too delicate in taste for most of us plebians..haha used to the rich gooey chocolately taste of cakes.. ..this cake tastes more like a tea cake perfect with a cup of hot steaming tea in a Victorian era ambience surrounding...
But luckily or unluckily..hee hee depending on the viewpoint of your tastebuds or your waist...I make Macarons!! Chocolate macarons with Bailey Chocolate Ganache.. ..so it a double dose of chocolate...with a hint of Bailey or rather a lot..haha.. ..was a bit heavy handed with the Bailey..according to some friends and family members who kindly provide me with feedbacks.
Now Macarons are delicate, delightful, delicious (now I alliterating!! haha) little morsel which is crips on the outside but moist in the interior..with just melts in your mouth...
Macarons by itself might be a little too sweet at least for mine case...so I paired it up with bitter chocolate ganache (addition of Bailey to intensify the bitterness)...Paired together, they balanced each other out and tastes great...If I do say so myself! hahaha
Macarons are known to be notoriously hard to make as they can be quite temperamental. Different batches from the same batter can result in some macarons having cracked dome, peaked dome or no feet!!! Once they are into the oven...it a must to watch them like a hawk to ensure that temperature n positiong of the tray result in perfect macarons..I had to throw away 3 batches before getting the knack of the placement and the oven temperature and timing...but even that...some of the macarons were cracked whereas some were close to perfection!!! The batter would have yield me about 70+ small little macarons (gerbets) but I managed to salvage only a little bit less than 40. well.. ..not bad considering this is the first attempt.....
I had shied away from macarons for a long time considering the reviews that this is a tough cookie (pardon the pun! haha) to crack.. ...and are tedious and time consuming..
No doubt it is time consuming, requiring a bit of technique and lots and lots of patience..but let me tell you ...the efforts are worth it when you see your first batch of perfect macarons out of the oven! hee hee. ....no other cookies keep you so much on the ball of your feet as macarons..the guesswork and anticipation and waiting are enough to make you feel that you survive a claz of Attackz successfully and live to tell it!
So as to end off this rather lengthy post, let me share a few bits of information that I feel might be useful in the quest for a perfect macaron
1. Patience, and lots n lots of it...have it in abundance and of course, pls don't do it in the middle of the night or evening when it a work day! You ended up sleeping at 4-5 am the next day and within a few hours, need to wake up and leave for work! hee hee
2. After piping the macarons, leave it out in the open for it to dry out a bit, perferably at least half an hour
3. Use Italian Meringue...feels that it is more stable than Swiss or French even though it is more time consuming
4. Certain recipes called for egg whites to be aged for a day or even two! fastidous me will not do that, so best method will be to seperate the egg as the first step and leave it out in the open while preparing for other ingredients. Eggs should be at room temperature too.
5. Shift the ingredients! this help to remove lumps and make the ingredients more fine too....
6. Use parchment ... it beats greaseproof paper hands down...

Oh gosh..time passes really fast...2 mre weeks and we are into June..the mid of the year and we be stepping into the later part of 2007 soon! where have all the time went to...hmmm
Recently went to Lerk (not confused with Jerk..pls haha) Thai for lunch....they having a one for one lunch set at WhiteSands....total damages for 2 ppl...$9.50!!! that ended up with onli $4.50 each.....and one set consists of tom yam soup, papaya salad or veg and main dish accompanied with rice.....so is defintely worth it....hee hee
But here goes my spoils for this week! hee hee
Stencil! not to be confused with art stencil..rather this is for decoration of cake...so you bake your cake..and dust the top with icing sugar or cocoa (depending on the color of ur cake) and you will have this cute pics on your cake!
Another stencil!!! different design..can't wait to try them out!
Qoo!!!!my favourite drink! hee hee I rarely drink flavoured drinks but this is one of my faves...though I had to admit that it partly due to the monster! haha...btw..the stencils and drinks are from Japan though.. :)
My biscotti!! (singular form: Biscotto! hee hee) this is after slicing up and waiting for the second bake :)
Just out of the oven..as you can see....the loaf is not shaped evenly...hee hee have to pardon me as this is the first attempt....or rather 2nd attempt...my second loaf! hee hee...Biscotti is a Italy biscuit...meaning twice baked biscuits....they are traditionally made without butter and are made with almond or/and anise...
Of course with the influence of other cultures and the easy availability of once hard to find ingredients, the traditonally biscuit had other ingredients added into it, such as butter, dried fruits and other kinds of nuts..
Since biscotti are hard, they are usually dunked into coffee to soften up a bit..though I prefer to eat them on their own :)
Also bought 3 really cute cookies cutter from daiso....comes in the shape of a bear, rabbit and love...hee hee they can also double up as a rice shaper! seriously cute..will post pics of it..once I make something with them

okie..here my recent bakes..
Water Chestnut cake... I love it in Crystal Jade..tried reproducing it at home..added way too much chestnuts and it wasn't firm enough :(
My Ji Dan Gao (hee wasn't scolding ppl!) this is the egg cupcake...very very soft and taste good although sis complains it was perhap a bit too eggy ...got the recipe from one online blog...tt lady sure can cook :)
My red beean paste...was a tad too dry....
Mochi!! that where the red bean paste went into...hee
Red bean paste soup with mochi..haha see that little black tingy on top of mochi....nt dirt leh...it Pearl..my sis insists on putting it in...though it does make it quite nice :)
nthing much to update except what I have been baking..
Have been sorta imobile these 2 days as I have pulled my back muscles due to improper stretching while jogging.....
But of cos..unable to sit till for long..I went for my favourite class - AquazFit!!! hee hee.....

Okie my bakes over the weekend...make tau sar piah for mum who was flying over to China...i though it tastes pretty weird..but friends and colleagues who tried insisted that it was fine!thought I was told to omit the pepper! heehee..will attempt to make another batch but this time...will reduce the amount of oil as it way too much!
After the sinful tau sar piah...decide to make healthy heathy cookies (well..as healthy as cookies can be!) Make oatmeal orange canberry and dates okie (what a mouthful!!) ha ha....with wholemeal flour...... so it healthy and full of fibre!!
Also went Kim Gary to eat.hmm...bad experience...food nothing to rave about...I still prefer Wan Zhai or Hong Kong Cafe!!!

Upon reaching my office...my boss asks me whether I want to go to the wake....i was like puzzled and ask him whose wake are we going for? At that point of time..still feeling nonchalence as in my line of work..we are used to death and going for wake or hearing about death is not a uncommon occurence..
But when my boss went on to further elaborate and told me that the wake is for the daughter of one of my nurse..I got a shock..
My nurse is young..probably in her 40s...and her daughter is barely into her 20s. It was a tragedy...and happens really fast...Apparently it happens within a week due to some rare blood disorder. ..
I guess life unpredictable.. ..anything can happen within a instance...and we should start treasuring loved ones and not taken a single second for granted..
Living in Singapore, with family members and friends within rader distance in such small country...we tend to ignore or take for granted the unqiue treasureness of having loved ones so near us and easy accessibility...appointments are flexible and always able to push to the furthest date...dates and meetups are always procrastinated to the last minute..and time with family can always be postphoned for something more interesting. ..
Maybe it time that we reevaluate our life..and allocated more space, time and love to people that we treasured...and not to show in during grand gestures and during government allocated holiday but rather through small, love filled actions and in our everyday life...

But when my boss went on to further elaborate and told me that the wake is for the daughter of one of my nurse..I got a shock..
My nurse is young..probably in her 40s...and her daughter is barely into her 20s. It was a tragedy...and happens really fast...Apparently it happens within a week due to some rare blood disorder. ..
I guess life unpredictable.. ..anything can happen within a instance...and we should start treasuring loved ones and not taken a single second for granted..
Living in Singapore, with family members and friends within rader distance in such small country...we tend to ignore or take for granted the unqiue treasureness of having loved ones so near us and easy accessibility...appointments are flexible and always able to push to the furthest date...dates and meetups are always procrastinated to the last minute..and time with family can always be postphoned for something more interesting. ..

okie..canele's photoz still have to wait as the photoz are located in my company's desktop!
First all ... ...May gonna be really busy...as I have to be committed to my volunteer work..have promised to go Ubin for cycling...to meet up with groups of friends for different birthday celebrations and also for a friend's wedding..I screwed...really screwed..haha how to make time..I just have to conjure some magic out!!
Went Xin Wang to eat this weekend..nothing fantastic...total damage for 7 people...$108!! that freaking expensive for the amount of food we devoured....tsk tsk..totally not worth it as I don't think their food are very good...
Make some baked goods too!!

Hee hee those jams are not made by me!!! I was given these few jars of blackberry jams by my sister...was thinking of making some cake or muffins with jam..but thought that since the jams are so nice..might be better to eat it with scones or bread on its own!! Decide to made soda bread as it a very quick bread that does not require rising time since it uses chemical leavener... as the name suggests..it using baking soda to help it to rise.. ...
The verdict: bread was not very tasty but jam was very! haha.. .

This is my durian puffs!! hee hee basically the puffs are made of choux pastry, using a technique similar to making roux.. ..the butter are melted into the boiling water and flour are added quickly and cooked..once slightly cooled...eggs are added and mixture is either piped or spooned into prepared baking tray....
Two things to notice: 1. Initally oven temp has to be high to allow steam to develop so that puff can rise and to lower temp later to allow structure to set. 2. I find that it is better to sprinkle some water on the baking tray as the additional steam allow the puff to rise more effectively.

Okie.....
Will have to do a backtrack post after I recieved my photos for the deserts that we have at Canele.
But first.. .. ..let update about the cupcakes that I had made.. ...
Made Lemon Meringue Cupcake...so how did the idea came about??? We have to start from Canele first..
Went Canele and saw Meringue kisses.. ..came in three favours... ..Lavender, rose and well orginal i think....
Thought about the Lemon Meringue pie that I used to make in Secondary school and decide to attempt it again.. ...but well was too lazy to make a whole pie tart.. ..and beside I am still in my phrase for cupcakes...and decide to change to lemon meringue cupcakes which require some modifications.. ..
Okie first all..the base has to be changed!....can't possible use pie shell as base..so changed to sponge cake as sponge cake is light and airy..so more suitable for the tart, light taste of lemon. That decide and taken care of...have to think about the filling and the meringue.. ..decide to cut down on the amount of sugar so that it is more suitable for Asian taste......and also to bring out the tart lemony taste...and not let sugar overwhelmed it.. ..so TATA!! that how the lemon meringue cupcake is born! hee hee.. ..going to give one to the birthday gal at work and hope she likes it...had also request for my sister to make a cat earnings for her as she is crazy over cats!...well will see her reaction tomorrow...and will try to get my hands on the deserts photos so that we can salivate over it! ha ha

Time to update!!
Been really busy these few days....only able to snatch a few hours of sleep before waking up on ungodly hours (at least in mine opinion!)around 6 plus in the morning!!
Had also been feasting non stop..think it really time that I take stock of what I eat and try to control...well...i defintely do not want to see my waistline expanding ever again except when I pregnant! haha.. .
Recently met up with one good friend who is drowning in her work..sounded so tired and jaded..listening to her..I guess I probably sound the same to others who take the effort to listen to me and encourage. So thanks to all my friends and family who had been faithfully listening to me bitch about my job and gave me lot of encouragements even though I had exhausted their patience with me.
My instructor recently went for a short trip to Bintan..upon hearing that Bintan has jackfruit chips..I told him to help me buy some over there since the chips are selling at a ridiculous price in SG...but alas..he bought 2 packs priced at SG $12 each! oh gosh...it as expensive as SG..in fact even more since he must have bought it at the ferry terminal - the tourist trap! haha..this instructor of mine is super cute lor..haha...and can't help but just adore him for his sweetness :)
I had also at my 1st taste at macarons! ha ha...in SG recently..there had been this craze for this french delicacy known as macaron..different from the US version..French macaron is made using egg white, almond meal and is usually sandwiched together with different types of fillings..whereas the amercian macaroon is made with coconut. I went to canele at Paragon to buy the chocolate macaron..it was ...well okay...haha...think canele had better selection that that..I saw so many cakes there that I am dying to try out but had to restrain myself as I just had lunch at Wisma and is currently trying my darn best to be on a diet! hee hee
Went for training for my volunteer work recently...oh my god....spend one whole day training..and had to travel to woodlands and reach the meeting place at 8am! I stay at the furthest side of east..notorious for being late and never on time..I still manage to reach there barely in time. Ha ha..see what importance I placed on my volunteering! But hai...I feel that the whole matter could and should be organized properly. Went for one comprehensive interview and 2 outings..we were still told that we might not be selected for volunteer work! This is even worst than going for job interviews!!
Though I had to admit I did learn something for my volunteering work....there was this session known as "reflections" whereby we were told to pick up any 1 pictures that are lying around in a room. Later we were given a piece of paper to write down the reason why we choose the pictures and our interpretations of it and what are the emotions involved. After that, we were supposed to turn the picture over..in the reverse page..the same picture is still shown but with its caption there. My picture was a little gal tiptoing on her daddy's feet...It makes me feels that there is trust involved and it should be a joyful and full of sweetness picture..but upon turning over..the caption was "It hurts me to see daddy crying" so basically the little gal was standing on her father's feet and trying to reach his face to stem his tears! My interpretation was totally way off!!! Well I guess this bespoke the kind of character that I had...hee hee I prefer to see the glass half full and believe more in being positive and happy all the time..that is not to say that I do not feel depressed and sad! I do..it just that I feel it senseless to dwell on bad emotions and let it pull me down..and that what i striving to be...stronger and better everyday!!
So let me end this lengthy lengthy post with a poignant caption that I saw at the "reflection" session...it reminds me of my deceased uncle who passed away last year and who I am still missing...

Juz a few updates... ...
1. Went for my club rainbow first outing....was a Sungei Buloh.. ...supposed to bring the children out on a trekking high..bt too bad...it was raining! And the worse thing....is that there are no wet weather plans! ..so we were cooped up with restless kids in a small limited enclosed place....trying to keep calm, maintained order and entertained the kids at the same time! No mean feat defintely! haha. ....the kid I was taking care of is an adorable 8 years who had cerebral palsy..bt still independent and really active!
2. Was thinking of making chocolate cupcakes with Mint creamcheese frosting...bt could not get my grubby hands on any Mints..and suddenly remember that my colleagues had her own mint plant..so get from her some...and turns out she gave me two branches! Apparently mint branches can propagante by themselves..so wat I need to do..is to stick both babies into soil and water them religiously and before long..they should be thriving and I shall have unlimited supply of Mints!!! yea...haha
3. Went for an interview that requires 5 hours of apitude test! oh my oh my.. ..it psychmotor, math and co-ordination test! And let just say that it will be considered a miracle if I manage to ace through it! hee hee. ....for someone who known for having virtual no maths talent, co-ordination skills and absymal multi-tasking skills.. ..it takes a great deal of courage to go for the test! Now the only thing left to do is pray and pray!! hee

Juz recently celebrated my instructor's Birthday!
Planned a surprise for him.. ...hee but one of us accidently let loose that we are celebrating at Agnes's house..haha luckily not much damage was done...and we manage to still give him a surprise :)
Birthday boy received a necklace and bracelet from us, plus a disney plush toy (dun ask me what it is though.. ..) nt sure what tt weird creature is called..haha and a Gucci card holder (his favourite brand).. ..
tt day was absolutely chaotic!!! we planned a comic skit but as all of us are busy busy working adults contributing to society....nobody has a chance of reading it much less practice it!!! ha ha.. ..turns out we have to improvise badly and badly it was done..but with lotsa laughter and fun..so well....I say it turns out to be really really good.
It was a potluck dinner...bt turns out that the food that received the most compliment is the bee hoon...which we bought from one of those stalls in Chinatown! ha ha...cat's mum cooked curry which turns out to be well-received too :)
Instead of a usual cake, we bought 24 cupcakes for birthday boy as it more unusual... ..wanted 33 but well..baker could onli gave to us in dozen..so well...but the cupcakes was done up real pretty and it looks really good...turns out that it not very sweet too..
Went for KTV after that...haha.. ...most of the time ended singing English songs..with those cheesy MTV of a gal staring forlonly out at the beact, road or even Singapore very own MRT station! ha ha. ... .the western should really invest in good KTV MTV as I heard that the KTV is starting its own craze over there.

Y am i blogging in the middle of working hrs!! ha ha cos i seriously bored and need a diversion..work is piling bt i feeling too legathric to do anyting..hopefully the feeling will pass soon...
Was on a 2 weeks break...clearing my leave! wat a good good feeling! hee hee did nothing except catch up with frenzs and of course...gym non stopped! ha ha..bt i pro need to scale down as i feel the aches and pain of e tortures I put my body through....and it seem like e more I gymed..the more I eat..have to kick the bad bad habit!
Did fulfill all my cooking cravings too and then some..hee hee
Make 4 different types of cookies
1. Chocolate crinkles
2. Checkerboard biscuits
3. Chocolate chip cookies
4. Lemon Melting Moments
Ha ha ..e chocolates favoured cookies went down well with every one tt tried..bt well ...e lemon melting moments garned mixed reactions..hehe with one frenz going aS far as saying it tastes like I put Ma ma Lemon (dish-washing detergents) inside!!
Make chicken pie too :) first time trying after 6-7 yrs..must be glad tt i still remember the procedure..
